Week 1 of My Take on Canadian Cuisines: Lobster Roll

Canadian Lobster Roll

Prior to me leaving for the land of the maple syrup, nothing will thrill me more than to prepare in these 3 months an array of Canadian favorites for someone who has meant more than anything to my pathetic life and my culinary career.

The first thing that flashes my mind is no other than the Canadian Lobster Roll. A traditional lobster roll is a sandwich filled with butter poached lobster served between a steamed hotdog bun. The poached lobster flesh is traditionally mixed with mayonnaise and variations of vegetables, lemon juice, salt and pepper. In the New England region, they tend to like theirs with the sweet scallions and even finely chopped sharp celery.

All condiments put on hold, there are the array of lobsters. From the Maine Lobsters to the humongous clawed Boston Lobsters to the intimidating Asian claw-less Rock Lobsters; as long as they are fresh and cooked properly. Over cooking a lobster is like serving a piece of rubber boot to the poor victim who has high hopes for an extravagant and unique treat.

So I have chosen to sought none order than the humble yet sweet Canadian Lobster to help me put together my French Asian twist on a great Canadian favorites. I will definitely dispatch the lobsters humanely before introducing it to two (2) great variations; that will not defile the originality just enhance the versatility.

Being a Chinese, it is a nose to tail dining and I will be treating the lobsters with the respect  and subtlety they need, from the shells to the tamales. It will be great with the list of ingredients that strikes; the colors alone has kept me going on to win nothing more than an approving smile and not shame a nation's favorite.

An array of ingredients have struck my currently feeble yet motivated mind,

Pictures and images I cannot rescind,

For now I could be blind,

Yet I know all these I could blend,

With ideas to grind,

I hope I will be able to deliver not being left in hardstand,

Knowing that a smile from the special lady will land me in home land.

Vancouver?

Vancouver, a coastal seaport city on the mainland of British Columbia, Canada says Wikipedia online,

That's where I get to ever see you while in Vancouver....online,

https://en.wikipedia.org/wiki/Vancouver#/media/File:Olymp_31.jpg

A diverse community of approximately 2.4 million inhabitants,

Yet my heart has been filled as it is where your image resides,

A community of people speaking English language in common and maybe even French,

Only in your language I drench,

To pursue a dream that sprouts from passion,

Nothing less from your never-ending encouragement and motivation,

1095 days abroad,

I hope I do not end up within the casket board,

Maple syrup undoubtedly is a Canadian renowned sweetness,

Yet saying you are way sweeter ain't shameless,

I shall always pray and hope,

Not skiing or snowboarding off the slope,

Maybe instead I will see the grizzlies,

However your smile unlike theirs sizzles,

Or I could kayak up to the orcas to say hello,

Remembering you being obsessed with minions...I am sure I will hear bello....

I could try the great halibut for a change,

But you'd be chirping to go for the box crab looking so strange,

I could indulge in the sinful poutine to nom,

Reminiscing from its greasiness you will squirm,

Despite the vast beauty and opportunity there,

My hearts badly need suture,

As eyes drew moisture,

Knowing you are not here,

I know I will miss you as someone who came for me to love,

Not to belong just to memorize,

A beautiful memory in the rough,

No matter how painful it is good enough,

Thank you for ever being part of my sorry life,

Even it was a fife,

Wishing you always the freedom and happiness of the dolphin or the dove,

I swear on my love,

Just for the girl I adore and love.

A beautiful song for you with unparalleled beauty, character and poise ...you earned and deserved this...

Dawn......

Peeked at the time,

For every second worths more than a dime,

                 Peeked over my shoulder,

Fat Roxxie's sleeping sound like a boulder,

Took a moment to ponder,

My life for now ain't a wonder,

But small little things bring joy and no blunder,

The small things that can even cause the thunder asunder,

Looked below and there Mickey sleeps,

His smile fills me with happiness in heaps,

Turned my attention onto my pad,

                 Lines and shades it clad,

Making sure it takes shape to detail,

Ensuring that it takes place before I set my sail,

Heart of pendant in ribbon and diamonds,

Personalized design for the heart that treasures,

It bears no flaw,

None like an over-seasoned coleslaw,

Design credit I do not claim an acquire,

                  Yet negativity never claimed sire,

Cause there is nothing more bountiful,

Than a SMILE from you which is ever so BEAUTIFUL.

                  Then it dawns to me,

                  Just like the strong brie,

To a foreign region I have to flee,

Pursuing passion in pots and pans with glee maybe,

Cause I will be saying a heart jerking goodbye,

To the lady I respect, adore and truly LOVE.

At Times

No one sees it coming,

It ain't a cacophony of colors,

Not even a pot of gold at the end of the rainbow,

No lush greenery,

No fields to harvest,

Only devastating hurl of boulders at every turn,

Painful it seems too surreal and extreme,

Even makes climbing a hill of broken glass and knives felt more comforting,

Yet,

Bumps and swells from pounding boulders heal,

Cuts, grazes and lacerations did not leave me bleeding to death,

I have learnt along the way and somethings just kept me going,

Making me want to triumph past all the ill forebodes,

Be it in my brewing stews or concoctions,

Be it me taking it out on the harmless sandbag,

You never realized how you can be inspiring,

Every step I took, seasoning I sprinkle, moment to ponder I took,

You were there,

My inspiration, my strength, my sunshine,

I ain't going to be here long,

Pursuing my dreams with my culinary passion in a foreign land,

A passion that sprung alive...the day I first saw you,

One day I hope I can walk and bounce with you,

With no worries and burden dragging me down,

You have always given me a reason(s) to not back down,

I am going to roar one day,

Roar away all your sadness and scratch related issues,

As you have meow-ed strength into soul so forlorn to live on,

With a perfect song from mere amateurs to lift the fighting spirit,

The song that turned a timid meow into a majestic roar,

The song that reminded me to never ever give up on myself,

And of you.

You....

Whenever I see you,

I do not have to worry at all,

I need not worry bout what to cook,

I need not worry bout what to eat,

I never have to worry about tomorrow,

Whenever your voice comes through,

I simply flourish,

Imagine the unnecessary pains that I choose to endure,

When I hear that you are down,

When you are in pain,

Waiting to put you in my arms,

It will be a long wait,

A long route of obstacles,

But I choose to persevere irregardless,

To pray and hope that,

You will always be blessed with smile and happiness.

SACRIFICE...as the Perfect Preacher says

It is something that we do not hear much anymore,

It is neither a modern word nor a forgotten word of relic,

But whenever people hears the word "sacrifice",

They become afraid to commit,

They become afraid that something will be taken away from them,

Or they have to give up something they cannot live without,

To these people it means "loss" in a world today that tells them they can have it all,

But I believe that true "sacrifice" is of victorious nature,

Because it requires our "Free Will" to give up something or someone one loves,

For something or someone that one loves more than himself or herself,

It is nothing but a gamble,

Sacrifice will not take away the pain of LOSS,

But it does win the battle against BITTERNESS,

The same bitterness that dims the light on ALL that is of "TRUE VALUE" in our lives,
