I Will Remember You Everyday



The picture tells me nothing but forlorn,

When your daily tears and grief took over, I felt how it feels like to be torn,

Yet I am thankful and blessed you were born,

An ode to my chosen path,

Not too smooth nor too rough,

A definite one of a kind,

To miss you out one has got to be blind,

You have been my daily aspiration,

My bible indeed for motivation,

You are short no doubt in height,

Yet you are gracefully astounding beyond my sight,

I am a definite daily nuisance,

Bothering you with my nonsense of endless abundance,

Unlike you being sweet & quirky,

I realized I am always somewhat truly blur & shitty,

You have been there when I was down,

So it is no surprise prices make you frown,

Taught me to be thrifty as you always have,

That is the lesson I shall always keep safe,

Remembering the special occasions with heart felt sincerity,

Is my only intention to imagine you smiling gleefully,

I am brave to admit you are always my inspiration,

As you braved each mile and depth at times despite health complication,

A force to be reckoned with when it come to your artistic creations,

That shall inspire me with my own concoctions,

Your voice never fails to sooth,

Any given moment with you is like light years of blissful warmth,

You have given me every reasons to survive daily,

It is impossible not remembering you everyday,

Week 1 of My Take on Canadian Cuisines: Lobster Roll

Canadian Lobster Roll





Prior to me leaving for the land of the maple syrup, nothing will thrill me more than to prepare in these 3 months an array of Canadian favorites for someone who has meant more than anything to my pathetic life and my culinary career.

The first thing that flashes my mind is no other than the Canadian Lobster Roll. A traditional lobster roll is a sandwich filled with butter poached lobster served between a steamed hotdog bun. The poached lobster flesh is traditionally mixed with mayonnaise and variations of vegetables, lemon juice, salt and pepper. In the New England region, they tend to like theirs with the sweet scallions and even finely chopped sharp celery.


All condiments put on hold, there are the array of lobsters. From the Maine Lobsters to the humongous clawed Boston Lobsters to the intimidating Asian claw-less Rock Lobsters; as long as they are fresh and cooked properly. Over cooking a lobster is like serving a piece of rubber boot to the poor victim who has high hopes for an extravagant and unique treat. 




So I have chosen to sought none order than the humble yet sweet Canadian Lobster to help me put together my French Asian twist on a great Canadian favorites. I will definitely dispatch the lobsters humanely before introducing it to two (2) great variations; that will not defile the originality just enhance the versatility.

Being a Chinese, it is a nose to tail dining and I will be treating the lobsters with the respect  and subtlety they need, from the shells to the tamales. It will be great with the list of ingredients that strikes; the colors alone has kept me going on to win nothing more than an approving smile and not shame a nation's favorite.






























An array of ingredients have struck my currently feeble yet motivated mind,

Pictures and images I cannot rescind,

For now I could be blind,

Yet I know all these I could blend,

With ideas to grind,

I hope I will be able to deliver not being left in hardstand,

Knowing that a smile from the special lady will land me in home land.

A diverse community of approximately 2.4 million inhabitants,

Yet my heart has been filled as it is where your image resides,





A community of people speaking English language in common and maybe even French,

Only in your language I drench,




To pursue a dream that sprouts from passion,

Nothing less from your never-ending encouragement and motivation,



1095 days abroad,

I hope I do not end up within the casket board,


Maple syrup undoubtedly is a Canadian renowned sweetness,

Yet saying you are way sweeter ain't shameless,


I shall always pray and hope,

Not skiing or snowboarding off the slope,


Maybe instead I will see the grizzlies,

However your smile unlike theirs sizzles,


Or I could kayak up to the orcas to say hello,

Remembering you being obsessed with minions...I am sure I will hear bello....



I could try the great halibut for a change,

But you'd be chirping to go for the box crab looking so strange,


I could indulge in the sinful poutine to nom,

Reminiscing from its greasiness you will squirm,


Despite the vast beauty and opportunity there,

My hearts badly need suture,

As eyes drew moisture,

Knowing you are not here,




I know I will miss you as someone who came for me to love,

Not to belong just to memorize,



A beautiful memory in the rough,

No matter how painful it is good enough,






Thank you for ever being part of my sorry life,

Even it was a fife,
